Sweeten Up National Cherry Day with Baskin-Robbins’ Cherries Jubilee Recipes

You’re invited to a jubilee! Cherries Jubilee is a beloved Baskin-Robbins flavor that features cherry-flavored ice cream, cherry halves and a hint of rum flavor to really kick up the party. While many guests love a scoop of Cherries Jubilee on its own, or with their favorite toppings like chocolate sauce or sprinkles, we thought we’d get creative for National Cherry Day today and use this delicious flavor as the main ingredient in two fun, new recipes for you to try.

Chocolate-Dipped Cherries Jubilee

Cherry-Jubilee-Cherries

 

Ingredients: Makes 12-16 individual chocolate-covered “cherries”

  • 1 fresh-packed quart of Baskin-Robbins Cherries Jubilee ice cream
  • 1 oz. ice cream scoop or melon baller
  • 1 container of chocolate shell ice cream topping
  • 20 fresh black cherries with stems
  • Toothpicks

Instructions:

  1. Place a cookie sheet lined with parchment paper into the freezer and allow it to chill for 10-15 minutes.
  2. Scoop twelve to sixteen 1 oz. scoops of Cherries Jubilee ice cream onto your cookie sheet, ensuring the scoops are as round as possible.
  3. Return your cookie sheet and scoops to the freezer and allow them to harden for one hour.
  4. Shake your container of chocolate shell coating thoroughly and empty it into a dish or bowl for dipping.
  5. Remove the scoops from the freezer. Using a toothpick in each hand, press the toothpicks into the ice cream ball from either side and gently lift. Dip each ball into the chocolate shell coating until it coats ¾ of the scoop, leaving a small portion uncovered on the top of the scoop. Place dipped scoops back onto your cookie sheet and return them to freezer until hard, or for up to one hour.
  6. Remove the cherry stems from 12-16 fresh black cherries.
  7. Remove the scoops from the freezer. Using a toothpick, make a 1/8th inch deep hole on the top of each dipped scoop. Place a cherry stem into each hole to complete the “chocolate-covered cherry.”
  8. Store “cherries” in an airtight container in the freezer until ready to serve. Try adding one to your nightly bowl of Baskin-Robbins ice cream to complete the experience! 

Cherries Jubilee Layered Trfile

Ingredients: Makes five 8 oz. jar trifles

  • 1 fresh-packed quart of Baskin-Robbins Cherries Jubilee ice cream
  • 1 8 oz. glass jar or similar container
  • 1 pre-packaged box mix for chocolate cake, or store-bought chocolate cake
  • Fresh black cherries (for garnish)
  • For the whipped cream:
    • 2 cups heavy cream
    • 6 tbsp. sugar
    • 1 tsp. vanilla extract
    • 2 tbsp. gold/spiced rum

Instructions:

  1. Clean four or five 8 oz. glass jars or similar containers and set aside.
  2. For the chocolate cake layer, prepare the boxed cake as instructed and let it cool. Measure the diameter of your jar and cut out circular pieces from your cake layer using a small knife or round cookie cutter with the same diameter as your jar or container. If needed, trim each cake piece so that it does not exceed 1 ¼ inches in height.
  3. Whisk the heavy cream, sugar, vanilla extract and rum until stiff using a whisk or countertop mixer. Set aside ½ cup of whipped cream and place it in a piping bag with a 1M (large swirl) piping tip.
  4. Place 15 medium (2.5 oz.) scoops of Cherries Jubilee ice cream in a large bowl and leave at room temperature to soften for approximately 20 minutes. Stir occasionally to combine liquid ice cream back into the semi-frozen ice cream.
  5. When your ice cream is a spreadable texture, begin to layer your chocolate cake, rum whipped cream and Cherries Jubilee ice cream into your jars. Start by placing a round slice of chocolate cake into the bottom of your jar; add ¼ cup of softened Cherries Jubilee ice cream, and top with ¼ cup rum whipped cream.
  6. Repeat those layers two to three times until your jar is full. Top with a swirl of rum whipped cream and half of a pitted black cherry. Enjoy!
  7. If making ahead for an event, store jars in the freezer without the swirl topping of rum whipped cream. Just prior to serving, add the rum whipped cream swirl and top with a cherry.
