Enjoy a Twist on Tradition with These Festive Cup of Cocoa™ Recipes

To celebrate the season, our Flavor Experts crafted two delicious recipes featuring our December Flavor of the Month, Cup of Cocoa™. This new scoop features marshmallow flavored and cocoa ice creams packed with mini marshmallows and is delicious in our recipes for a Winter Whoopie Pie or Cup of Cocoa™ Mug Cake.

Winter Whoopie Pie

Ingredients: Makes 12 ice cream sandwiches.

For the Whoopie Pie Cookies:

  • 2 cups all-purpose flour
  • ½ cup cocoa powder
  • 1 ½ tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 1 egg
  • 1 cup whole milk
  • ½ tsp peppermint extract

Served with:

  • 1 Regular Fresh Pack of Baskin-Robbins Cup of Cocoa™

Supplies & Equipment:

  • Standard 9x13” baking tray
  • Parchment paper
  • Small mixing bowls
  • Standard teaspoons, tablespoons, and cups
  • Whisk
  • Rubber spatula
  • Hand or stand mixer with paddle attachment

Instructions:

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Line 9x13 baking tray with parchment paper.
  3. Cream together the softened butter and sugar until well combined using a stand mixer with the paddle attachment or a hand mixer.
  4. Add eggs and peppermint extract into the butter mixture and mix until well combined.
  5. Sift together flour, cocoa powder, baking soda, baking powder, and salt into a bowl, making sure the ingredients are well combined.
  6. Add half of the flour mixture into the wet ingredients and mix until just combined.
  7. Add half of the milk into the mixture and combine.
  8. Repeat with the other half of the ingredients.
  9. Thoroughly mix the batter until uniform.
  10. Use a tablespoon to drop mounds of batter onto the baking sheet, about 2 inches apart. Make sure there is an even number of cookies, you will need 2 to complete each sandwich.
  11. Bake for about 10-12 minutes or when they slightly bounce back to the touch.
  12. Allow woopie pie cookies to cool completely, about 5-7 minutes.
  13. Add 1 scoop of Cup of Cocoa™ on top of one cookie.
  14. Add another cookie on top, creating a cookie sandwich.
  15. Serve and enjoy.

 

Cup of Cocoa Mug Cake

Ingredients: Makes 1 personal mug cake.

For the cake:

  • 3 Tbsp all-purpose flour
  • 2 Tbsp granulated sugar
  • 2 Tbsp cocoa powder
  • ¼ tsp baking powder
  • ¼ tsp salt
  • 6 Tbsp milk
  • ½ tsp vanilla extract

Served with:

  • 1 scoop of Baskin-Robbins Cup of Cocoa™ Ice Cream

Supplies & Equipment:

  • Microwave-safe mug
  • Spoon
  • Standard tablespoons and teaspoons

Instructions:

  1. Combine flour, sugar, baking powder, and salt in a microwave-safe mug.
  2. Stir to combine.
  3. To the combined mixture in the mug, add milk and vanilla extract.
  4. Stir until the mixture is uniform.
  5. Microwave on high for 1 minute 30 seconds. Let cool for 1 minute.
  6. Serve with a scoop of Baskin-Robbins Cup of Cocoa™ on top and enjoy!
