Today is National Sandwich Day, and needless to say, we are excited! This day is all about expressing your love for everything sandwich, and Baskin-Robbins is here to help you do just that.
In celebration, our very own Chef Nikki McKinnell created an ice cream and waffle sandwich recipe that will start your day off right. These delicious treats, nicknamed “Brunch Buddies,” are ice cream filled waffle wedges which offer a sweet twist on your traditional breakfast sandwich.
“Brunch Buddies” Ice Cream Filled Waffle Wedges
Ingredients:

1 regular size of Baskin-Robbins Fresh-Packed Chocolate Chip ice cream

1 box (10 count) breakfast waffles, prepared

1 bottle (7.25 oz.) magic shell ice cream topping
Directions:

Line a baking sheet with wax paper or plastic wrap. Scoop full, rounded individual scoops of ice cream onto the sheet, leaving 3-4 inches of space between scoops.

Working quickly, place another layer of plastic wrap on top of the ice cream and gently flatten the scoops 1-1.5 inches using the bottom of a glass or a flattened palm.

Place ice cream scoops in freezer to harden, about 1 hour.

Following package instructions on box, prepare breakfast waffles.

Remove baking sheet from freezer and place each flattened scoop of ice cream between two waffles.

Cut waffle sandwich into quarters.

For 10 waffle wedges, dip one side of waffle quarter into magic shell coating, followed by rainbow sprinkles. Drizzle caramel sauce over remaining waffle wedges. Enjoy immediately.
