Every Season is Ice Cream Season! Celebrate the First Day of Fall with These Baskin-Robbins Vanilla Ice Cream & Apple Recipes

Baskin-Robbins Vanilla ice cream has been a staple on our flavor menu since the very beginning. Our Vanilla ice cream is made with fresh cream and vanilla extract that utilizes twice as many vanilla beans as traditional extract to give it its rich vanilla taste with notes of dried fruit. This is why Vanilla is not only one of our most beloved flavors but is also one of the best flavors to pair with other sweet ingredients to create some amazing recipes. To kick off fall, our culinary team developed three delectable recipes using Baskin-Robbins Vanilla ice cream and crisp autumn apples. Keep reading to learn how you can make these mouth-watering recipes at home!

Inside Out Apple Pie a la Mode

Vanilla Ice Cream Recipe 1

Ingredients: Makes 8 servings

For the Vanilla ice cream caramel pie:

  • 1 pre-packed quart of Baskin-Robbins Vanilla ice cream
  • 1 pre-made graham cracker crust
  • ½ cup caramel sauce

For the brown sugar streusel:

  • ½ cup brown sugar, packed
  • ½ cup cold butter
  • ¾ cup flour

For the hot apple topping:

  • 2-3 apples, crisp variety (Pink Lady, Honeycrisp or Granny Smith)
  • ¼ cup butter
  • 1 tsp. lemon juice
  • ¼ cup caramel sauce
  • ½ tbsp. cinnamon

Instructions:

Vanilla ice cream caramel pie:

  1. Scoop half of the Vanilla ice cream from your Baskin-Robbins pre-packed quart into a microwave-safe bowl. Using 20 second intervals, melt the ice cream in the microwave until ice cream has a soft spreadable texture, stirring the ice cream well between intervals.
  2. Place the softened ice cream into your graham cracker crust and smooth evenly with a small spatula. Return to freezer until set, approximately 1 hour.
  3. When your ice cream layer is solid to the touch, remove your pie from the freezer. Carefully add ½ cup caramel sauce to the top of your ice cream layer, smoothing with a spatula. Return pie to freezer until caramel is stiff and sticky to the touch, about 20 minutes.
  4. Scoop the remaining Vanilla ice cream from your Baskin-Robbins pre-packed quart into a microwave safe bowl and soften as directed above.
  5. Spread the softened ice cream over your caramel layer and smooth with a spatula – ice cream should fill the crust up to the edge.
  6. Place pie into the freezer for at least one hour to set.

Brown sugar streusel:

  1. Combine butter, sugar and flour into a bowl. Mix ingredients together by hand, dividing the cold butter into chunks no smaller than ¼ inch.
  2. Spread streusel onto a baking tray lined with parchment or coated in baking spray.
  3. Bake at 325° F for 20 minutes, or until tops of streusel chunks turn lightly brown.
  4. Remove from oven and allow to cool completely on tray.

Hot apple topping:

  1. Core and slice 4 crisp variety apples.
  2. Add butter to a sauté pan or skillet over medium heat. Once butter is melted add apple slices and lemon juice and cook for 10-15 minutes, stirring occasionally.
  3. Add caramel sauce and cinnamon; stir to combine. Cook for 5 minutes and remove from heat.

Once the hot apple topping is ready, slice your ice cream pie into 8 portions. Top Vanilla ice cream pie with the hot apple topping and sprinkle the brown sugar streusel on top. Enjoy with friends and family!
