When the crisp fall air sweeps in, there's no better way to cozy up and enjoy a treat than by baking something sweet. Our Flavor Experts crafted two delicious recipes using October Flavor of the Month, Apple Cider Donut which features apple cider donut ice cream packed full of baked apple cider flavored donut pieces and cinnamon sugar swirls. Apple Cider Cinnamon Dumplings a La Mode
Ingredients: (Makes 8 apple dumplings)
For the apple dumplings:
- Granny Smith apples - 8
- Brown Sugar - 1 cup, divided
- Cinnamon - 2 teaspoons
- Nutmeg - 1 teaspoon
- Salted butter - 1/2 cup cut into 8 pieces
- Premade puff pastry crust - 1 box
- Flour - 1/4 cup for rolling
For the apple cider caramel:
- Apple cider - 3 cups
- Granulated sugar - 1/2 cup
- Salted butter - 2 tablespoons
- Vanilla extract - 2 teaspoons
Served with:
- 1 scoops Baskin-Robbins Apple Cider Donut ice cream
Supplies & Equipment:
- Standard 9x13" baking tray
- Small mixing bowl
- Rolling pin
- Knife
- Apple corer and peeler
- Standard teaspoons, tablespoons and cups
- Saucepan
- Spatula
Instructions:
- Preheat oven to 375 degrees.
- Combine brown sugar, cinnamon and nutmeg in a small mixing bowl. Set aside.
- Cut butter evenly into 8 pieces. Set aside.
For the Apple Dumplings:
- Peel and core apples at the center leaving the apple whole. Set apples aside.
- Lightly dust your work surface with flour. Using a rolling pin roll, stretch your premade puff pastry until it reaches about 16" by 16" in size.
- Cut premade puff pastry evenly into 4 square pieces. Repeat on the other piece so you have 8 square total.
- Place peeled and cored apples in the center of each square of the puff pastry, the cored middle should be facing upward. Then, take one of your 8 butter chunks and place each in one of the openings of the apples.
- Divide brown sugar mixture between the apples and sprinkle mixture inside and around the center of the apple.
- Using a little bit of water wet edges of the puff pastry.
- Bring one corner of the dough up to the top of the apple.
- Bring the opposite corner of the dough to meet in the center.
- Repeat with the remaining two corners, bringing them up into the center and slightly pinch all four to seal. Pinch where the edges of the dough meet to completely seal the apple within the dough.
- Repeat with the remaining apples.
- Place apple dumplings into a baking dish.
- Bake in the oven for 50 to 60 minutes. Apples should be slightly softened on the inside with the crust golden on the outside.
For the apple cider caramel:
- While apples are baking, in a saucepan combine apple cider, sugar and vanilla.
- Place saucepan over medium heat and bring to a boil. Then lower heat and let simmer and reduce for 15 minutes or until mixture coats the back of a spoon. Turn off heat and add in butter stirring until dissolved. Set aside for serving,
- When dumplings are done baking let cool for 10 minutes.
For Garnish and Serving:
Garnish with apple cider caramel and serve with Baskin-Robbins Apple Cider Donut Ice Cream.
Apple Cider Donut Dump Cake
Ingredients: (Makes 1 9x13" cake)
For the cake:
- Yellow cake mix - 1box
- Eggs - 3
- Baskin-Robbins Apple Cider Donut Ice Cream - 1 small fresh-pack, melted
For the vanilla glaze:
- Powdered sugar - 1 cup
- Whole milk - 2 tablespoons
- Vanilla extract - 2 teaspoons
Supplies & Equipment:
- Standard 9x13" baking tray
- Large mixing bowl
- Small mixing bowl
- Standard teaspoons, tablespoons and cups
- Sifter
- Whisks
- Spatulas
Instructions:
For the cake:
- Preheat oven to 350 degrees and grease a 9x13" pan.
- In a large mixing bowl combine yellow cake mix, melted Baskin-Robbins Apple Cider Donut Ice Cream, and eggs. Whisk together until combined.
- Pour cake batter into 9x13" pan and spread even with a spatula.
- Bake for 30-35 minutes or until a knife comes cleanly out at the center. Let cool until ready to serve.
For the vanilla glaze:
- In a small bowl, sift powdered sugar until lump free.
- Add in half the milk and vanilla, whisk together, continue adding the rest of the milk until desired consistency.
- Drizzle glaze on top of the cake and serve with Baskin-Robbins Apple Cider Donut Ice Cream.
