Happy (almost) National Ice Cream Cake Day! No matter what the occasion is, a Baskin-Robbins ice cream cake is always the best way to celebrate. No one knows that to be truer than Baskin-Robbins franchisee and insanely talented ice cream cake artist, Kristine Schmunk, also known as “TheCakist” on Instagram. This National Ice Cream Cake Day, we’re celebrating Schmunk and all the dreamy creations she makes daily.
Schmunk is a second-generation franchisee with a passion and talent for creating eye-catching ice cream cakes for customers near her two Baskin-Robbins shops in Spokane Valley, Washington and Coeur d’Alene, Idaho. Baskin-Robbins has always been a part of Schmunk’s life, whose parents bought their first store in 1985. Since then, she has learned about the ice cream industry and has even been able to apply her talent as an artist to ice cream cakes in her shops. Schmunk has created incredible cakes for any and every occasion you can think of, from children’s birthdays, to end-of-the-school-year celebrations, to finishing Cancer treatment cakes — each one special (and delicious!) in its own way.
Schmunk has some regular customers, including a family who comes to her every year to create a birthday ice cream cake for their little girl, always giving her the creative freedom to come up with whatever the child wants to see come to life in cake form. A few years ago, it was a surprising request, resulting in an ice cream cake you don’t see every day. The young girl’s request? “Some creepy pasta with an emo fish.”
When she’s not taking orders for ideas dreamt up by young kids, Schmunk is putting her talents to use creating beautiful works of art for summertime fun, Mother’s Day, graduations and even some cakes to lift spirits during the coronavirus (COVID-19) pandemic. Some of the most impressive creations, however, don’t look like cakes at all but rather like food favorites, including a juicy hamburger, a tall stack of pancakes, or a sushi roll.
“Cake decorating for me is a creative outlet,” said Schmunk. “I’ve told people over the years that I have such a fun job, a lot of aspects of being a Baskin-Robbins franchisee are amazing.”
So, what’s the most rewarding part of being able to bring these unbelievable cakes to life? “I have two nephews, so over the years I would always make something unique and special for them, it’s been a pleasure.”
